To pick out two dozen for myself and one dozen for my girlfriend, we had to look through seven cartons of eggs, four having cracked eggs. We're not talking about little cracks, but egg sprawling out of the egg, some containers having multiple cracked eggs. Also, when I hard boil my eggs I put them in warm water first to avoid cracking, and I've noticed a very large amount of them in the last few weeks having bubble streams, meaning air is escaping from the shell. I hard boil for portable eggs and when I have time in the morning I eat the yolks raw. I usually eat 6-12 raw a week, and a dozen cooked. I haven't noticed any raw yolks tasting rancid, but I have had trouble getting the yolk in tact making me unable to separate them. This especially happens because, like you said, the shell sometimes stays together and becomes crumbled rather than actually cracking. My three yolks came out perfect this morning, but almost every single other time in the last couple weeks I've had at least one out of three come out not in tact, so I've had to mix it into my egg-white ommelette. I suggest Country Hen, if they're available in your area. I can't afford to buy them, because a half dozen costs almost as a dozen of GCF, but they are definitely superior-- especially the shells. They have twice as many omega-3s (though they are probably higher percentage short-chain as it comes from flax rather than algel), and they include oyster shells in the feed they mill themselves, giving a very healthy shell. My only problem is sometimes I have to hit it to hard to get it to crack! I wish I could afford to buy all my eggs Country Hen (or better yet pasture my own chickens), but I can't right now. They are currently unable to get the oyster shells, or will be soon, because of a new law, and are looking for a new source. Usually these are just local folk with pet chickens. Some will be acceptable some not but these are likely your best bet.
