I never have my butter very long, so I'm not sure exactly how long it should last, but I think if it is properly washed to get out all the traces of butter milk that may be deposited in pockets of it, it should last at least a few weeks in the fridge, and if you are going to have it longer you can freeze it. To wash it, keep pouring in clean water and pressing the water out until the water comes out clear rather than white. The butter is absolutely healthy. The WAPF site has an article on the health benefits of butter. It should have roughly the same amount of fat as any other butter, but all fats and oils are primarily made of fat, and the point of using them is to add fat, so a fat can't really be " too fat. " If you are worried that you should have less fat for your individual metabolism, you could just use less butter. I use about a pound of butter a week myself. As far as being fattening, that is, making the consumer fat, butter should probably help you lose weight if anything, because added to your carbs it will slow the conversion of the carbs into glucose, and therefore into fat. Moreover, I find that butter is a superior source of satiety, that is, that for an equal amount of calories, butter is more filling than any other food, so the more butter you add to your diet, the fuller you will get from a smaller amount of food, and will overall eat less calories. That is my experience, at least. Also, the saturated fat in butter is a precursor to sex hormones that will stimulate your metabolism and weight loss. In additional to all of this, if your cream is coming from grass-fed cows, it will be rich in conjugated linoleic acid (CLA) which is a fatty acid that, among other things, stimulates weight loss. So I wouldn't worry about the butter being to fat or fattening. And you know, it's quite ironic, because with all the hype about butter and other saturated fats being bad for your heart, I find that even though I have much less time to exercise than I used to, my cardiovascular health has improved very much now that I consume 5-10 times the recommended maximum of saturated fat. I can do much more intense aerobic exercise than I ever could and for longer. If I am ever late for class or something, sometimes I will just sprint for 5-7 minutes, or run up stairs two at a time for 7 flights, etc, etc, and barely lose my breath. I could never do that before. From my reading and personal experience, I'd say the more butter the better. But everyone, I suppose, will have an individual reaction. Hello everybody, I'm not that paranoia! Just want te make sure. I've got my raw milk. The farm where I get it looks perfect to me. The taste of the milk is great. Tonight my first milkkefir is ready and tomorrow my villi. Just have to be patient. I've made cream and butter from the top layer of the milk. Have some questions about the butter. Am not paranoia but just don't know much about raw milk. How long can you keep the butter good in the fridge? How healthy is the butter? Is it not to fat?
