Pure Whey Fermenting

I've been meaning to ask about fermenting vegetables. I have LOTS of

whey, because I make lots of cheese. Can I just put some veggies

(like beets or okra or cucumbers) in a jar, and fill the jar with

whey leaving about 1 inch of space in the jar? Would that work? Would

I have to use salt? I guess instead of asking people I could just try

it and find out...but I like my fermented veggies aged, and that

would take a while to get my answer. Anybody know the answer to this

one?

Yes, yes, and yes.

Yes you can ferment with whey, works great! Yes, adding salt is a good

idea, also add various spices for flavor. Yes you can ferment without the

salt, but I don't care for the taste.

I also ferment fruit juices. Just juice whatever fruits, add 1/4 whey, let

sit 12 to 24 hours with a tight lid. Put in refrigerator and enjoy!

If you do not want alcohol, stop the process at about 12 hours (by bottling

and refrigerating) then let it sit in your refrigerator for another 12 hours

before drinking.

Whey can also be added to omelets, you can ferment flour to make sour

breads, etc.

I ferment most everything, including my cat's food!
