When you buy raw cheese make sure to contact the manufacturer and find out the maximum temperature the cheese reaches, as most " raw " cheeses sold in stores are not really raw. Guest guest Posted December 23, 2002 Report Share Posted December 23, 2002 Meadow Creek Dairy is my favorite, http://www.meadowcreekdairy.com, the milk for all their cheese is kept raw, except the Mountaineer variety which I think they said was heated to something like 117 degrees F. The Swiss Connection is also very good, no website but you can contact them at ayegerl@... or 812-939-2813. They have both raw and pasteurized varieties, and also have wonderful grassfed butter (not raw), plain or cultured. Both use milk from their own herds of grassfed cows, no grain, Meadow Creek is an all-Jersey herd I believe, and The Swiss Connection is a mixed herd.
