We also put a tablespoon or two in our smoothies. Sometimes we make a candy out of it by letting it soften, adding honey, vanilla, ground nuts and sometimes carob powder. Then we put spoonfulls of the mixture on cookie sheet or plate and put it in the fridge to harden. We also make a coconut milk ice cream that we sometimes add butter to as well. Guest guest Posted November 27, 2002 Report Share Posted November 27, 2002 Here are some butter recipes: butter candy: 3 parts butter, .5-1 part honey, 2 parts ground nuts, .5-1 tsp vanilla, couple tablespoons of carob (optional) I came up with the above combination myself, but I have seen similar recipes posted on the live food list, so you might want to try searching there too. coconut milk ice cream: 14 oz coconut milk, 3 egg yolks, .25-.5 cups raw, unsalted butter, .75 cups honey, fruit- usually 1.5 cups or about a 1-1.5 inch cross section of pineapple Add half of the coconut milk, all the eggs and all the butter to a blender and blend until smooth (it works better if the butter is soft). With blender still running, add honey and rest of coconut milk. Then add the fruit (we use pineapple). Blend well. Put in an ice cream maker! :-) If you don't have an ice cream maker, I don't know what to tell you.
