Fermented coconut

I've been thinking about taking a shot at fermenting coconut meat. Before I

waste a perfectly good coconut, is there anyone here who's done this before

and has some advice to offer?

Haven't done this but want to try the coconut milk yogurt I saw in an African

article. Don't see why the fresh coconut couldn't be added. I'd think the best

fermenter other than yogurt culture would be kefir whey.

Haven't done this but want to try the coconut milk yogurt I saw in an African

Can't find the article but I do remember there was no recipe. Just that

coconut

milk could be made to yogurt with culture and was in Africa. The bacterial

amount was given too. Some people on the coconut list have made it with all

coconut milk or 1/2 coconut milk 1/2 milk. Am going to try a 5.5 oz. can of

Thai Kitchen Pure Coconut Milk, equal part milk and 1 1/2 tblsps. yogurt

for my

first experiment. Don't want to give up the cream on the top.
