Don't see why the fresh coconut couldn't be added. I'd think the best fermenter other than yogurt culture would be kefir whey. Just that coconut milk could be made to yogurt with culture and was in Africa. The bacterial amount was given too. Some people on the coconut list have made it with all coconut milk or 1/2 coconut milk 1/2 milk. Am going to try a 5.5 oz. can of Thai Kitchen Pure Coconut Milk, equal part milk and 1 1/2 tblsps. yogurt for my first experiment. Don't want to give up the cream on the top.
