Sick and then just life took over :~) Anyway, this has been bugging me. I " m sure you guys have talked about it. But if the wheat we eat now has like 2x's (or more) the amount of gluten in it, where's the wheat that doesn't? Or is is all gone cause of the biotech folks? I'd love to try it to see if its any different. I know lots here, including myself, don't do grains anymore for one reason or another. But if you could get some 2000 wheat would you? It'd be different no doubt. Or would you still avoid it. How much of a difference does the gluten count matter? Just curious, LiSaC PS: Thanks Heidi for the " cheese bread " reciepe for my niece. Have not made it yet, but I plan too. I do't think I thanked you properly; I got sick and then, well you know...anyway, thanks for sending it to me; I still have it. Let you konw how it turns out. Guest guest Posted December 29, 2002 Report Share Posted December 29, 2002 I know of folks on this list who have made bread with regular wheat in such a way that they no longer got a reaction from gluten. When you make sourdough bread, you let it rise for a longer time to give the lactobacilli a chance to predigest the grain. It's how you prepare it that is the crucial point.
