About GRANOLA BARS:

I just made a very simple and I think NT acceptable granola. I

flaked some whole oats (you can buy oatmeal also). Then I soaked

the oats in enough water and whey just to dampen them. Kept this in

a warm spot for a day or so. To these damp oats I added raw honey

(a dark one), rapadura, maple syrup and vanilla to taste (not too

sweet) Also added some salt and a heaping scoop of coconut oil,

melted. Spread this mixture on a sheet of parchment paper and

placed on a perforated pan in my small convection oven at 250

degrees. When mostly dry, I put in a 150 oven to finish. Tastes

pretty good. You could add cinnamon too.

Now to make bars, I am guessing that I could use whipped egg whites

as a binder (like Sally's holiday pecans), add some raisins, or

other dried fruit and chopped soaked nuts as desired, even carob or

choc chips. Then form and bake. I think I'll try this and then let

you know. Any other ideas?
