Koumiss is fermented mare's (horse) milk. It is effevescent and has

a light alcoholic content like kefir, but contains about 5 times

more Vitamin C than cow's milk. It is very popular in Russia, and,

not too surprisingly, has been shown to have some medicinal

qualities as well. I would love to find the starter for it.
