I recently got some via a WAP local chapter pork share, but that farm apparently doesn't ship. Ideally I'd like to get lard from pigs which aren't fed any grains or legumes at all (particularly not soy!) but which are pastured and supplemented with root vegetables, but everybody seems to use grains instead of root vegetables, evolution to notwithstanding. I'm currently talking to a farmer who may actually be willing to raise a pig to my own specifications at some point next year, so that raises my next question: what IS the ideal pig feed? Not being ruminants, pigs' fat tends to reflect the foods they eat, so my goal would be to yield a pig with both the greatest possible vitamin D and other nutrient content and with fat that's as saturated as possible. IOW no corn or anything like that which will result in lots of PUFAs in the fat. I'd imagine that turnips would be better than potatoes, but I'm really at sea here. Can anyone suggest anything? I'd really appreciate any advice -- and any tips on where I can still get some lard (or pig fat I can render into lard) at this late date.
