I have been ordering a raw cheddar made by Organic Valley, but a new brand became available that was much less expensive so we ordered it. It is also cheddar but it smells like very aged parmesan. It tastes very " sharp " or aged also. I was wondering if any one knows much about aged cheese and why the cheddar would taste/smell like that. Is it labelled aged 60 days, aged 90 days, etc? Maybe it is really raw, unlike Organic Valley (heats their's to 150), and that contributes? Also personal comparison seems to indicate that raw cheese is a little sharper. I love sharp cheddar and will buy cheddar that has been aged for 3 years! > Maybe it is sharp cheddar?
