I think he will like that. I remember now that butter and cheese sandwiches were common in the sandwich shops in France (was there about 12 years ago). Unfortunately, he doesn't like eggs...maybe in time his taste will change, since he is pretty adventurous otherwise. As an aside, I have been baking with sourdough recently, after successfully starting my own starter using rye flour as Sally suggests in NT. I had tried before using wheat flour, and it didn't come out nearly as well---rye flour starter is easy and seems very vigorous. I was reading Nature's Children by tte de Bairacli Levy (1997 Ash Tree Publishing) last night and came across the subject of honey and babies. There are numerous cautions - in the beginning they read like this (pg 44) " Caution: Infants under one year of age may very occasionally get botulism, a dangerous food poisoning, from honey. " The on pg 46 " Remember the caution against using honey for infants under one year of age. " Then, it breaks down a bit, and I can't help but laugh because she seems like such a spunky person/writer ( pg 50) " I always use honey as my sweetener, but modern honey, produced from bees fed terrible chemicals, and worse yet, white sugar, may be dangerous for infants " . Then on pg 48 she gives a recipe for infants with dysentery, and includes honey, but adds " or maple syrup, if there is a fear of botulism spores that may be present in the honey. I do not fear! I use only approved healthy honey! " . Well, I love her writing, but there appears to be some level of danger to feeding babies under 1 year honey-so I wouldn't risk it, especially since there is access to other good sweeteners, like maple syrup.
