I've had North Star Bison's and Slanger's and both were very good. I just bought 1/2 of a home-raised pig and am brining a ham roast and bacon to be smoked in a friend's smoker. I'm also drying grass-fed beef and thawing some of the pork lard for pemmican. I had the butcher give me a lot of trim which I am going to have cut with some local grass-fed buffalo trim and turned into nitrate and msg-free sausages and brats by a local butcher. The pig ended up costing about ..75 pound and the finished sausages should be around $4.35/lb. (they will be about 85% buffalo/15% pork and the buffalo trim is $3/lb). The best honey is not heated and not filtered in order to get the pollen and propolis. I was able to convince a local honey producer to pour it " straight " for me. He was ok with that as long as he was assured that I wouldn't complain about bee parts floating on top (of which there were a few). When you buy it fresh and unfiltered, the stuff is dispersed throughout the honey, but given a little time, it will all rise to the top, so the way to tell if it's unfiltered is if there's a layer of stuff (beeswax and the other good stuff) on top. Unheated honey will crystallize in time, I've been told. The BEST honey I've ever had was the fermented stuff from " Really Raw Honey " that they gave away for the price of shipping as was posted here by Sally last year.
