The post is slightly edited for readibilty sakes. Bianca " heres a possible answer, aside from it having lots of residues in it if it was smoked, or if it was not organic, i.e chemicals sprayed onto it. And here is another, some brands of manuka honey are unheated, BUT the way they process the honey is with high presure air, this way they can bottle the honey quickly without heating it, however, the high air pressure can oxidize the honey and even if it were unheated, some people react to it. Besides, when they say unheated, that doesn't mean it couldn't be heated to 100 or 120 degrees, it just means it wasnt heated to the food-definition of heated which is about 160 degrees. So, call the company. Dont ask them " is your honey heated, " ask them " what is the highest temperature your honey is heated to. " If they say we dont heat our honey ask them if they use air pressure to pack it. Or if they use smoke to smoke out the hives prior to gatheirng the honey OR maybe it was sprayed. Even if they say it wasnt sprayed maybe they buy the honey from another source, then there is no control over what could have happened to it. Kapeesh?
