But loosing 12 pounds is really a great reward for all of your efforts. It is not always easy, but it is sure worth it in the long run. Most anything can be frozen. Lean ground beef, pinto beans tomatoes, onions, and whatever legal spices you like make a great chili. Make up a big pot and freeze the leftovers. I often freeze cooled chili in zip lock bags. They stack easily and thaw quickly. Don't forget soup. Beef or turkey with the appropriate legal vegs simmered all day. Add lots of seasonings. I save the turkey bones from Thanksgiving and simmer for about 24 hours on low. Then strain the broth, pick the meat from the bones and reduce further if I am not going to make soup immediately. This stock will be thick and will freeze easily. When ready for soup, you will have the seasoned broth immediately and just have to add vegs. Be sure to add seaweed to the soup. Garlic and ginger are too good to miss. I am buying a used freezer next month and will be able to freeze large batches of soup and chili in meal sized portions. It will be nice to be able to cook well again. Sometimes cooking for one is hard. This way I can cook for a crowd and then have plenty for several months of cold weather ahead. Keep up the good work.
