Good topic! With teenage boys, I end up cooking (or not) for one quite often.

Here's my favs: sardines in tomato sauce on Kavli crackers, tempeh

pan-grilled with crunchy fresh carrots, and the real instant meals for me are

jerky (teriyaki often skips the MSG but homemade's safest) or a handful of

almonds. More ideas out there?

Your list and I'll add a few of mine. Anyone else want to add a few to the

list and post it back?

sardines in tomato sauce on Kavli crackers

tempeh pan-grilled with crunchy fresh carrots

handful of almonds

poached eggs on toasted spelt bread

goats cheese on ezekiel bread

stir fried canned tuna slices with cherry tomatoes & tamari soy (limit on

tomatoes)

any acceptable stewed fruit on pancakes (also limit on fruit)

I also roast up a leg of lamb and a chicken and keep them cold in the

fridge.

I to am keen for ideas for single meals, as the rest of my family

does not yet share my enjoyment for ER4YT meals. I quite often end

up cooking for them and then making myself something different.

A couple of quick ideas are tinned sardines mashed on toasted rice

bread, a squeeze of lemon on this is nice. I quite often have this

for breakfast as a quick protein fix before I head of to work. Also

Hummas as a dip with Japanese rice wafer crackers make a good snack.

Here, here O sister!

I'm in a very similar boat - absolutely no desire to cook and wouldn't have

the time even if I did. Two things I have purchased have made a huge

difference: the Forman Grill (because so many people here wisely

recommended it) and a slow cooker (aka crock pot).

So my quick, easy dinners are:

1) Throwing any O friendly slab of protein (beef, chicken, fish) on the

Forman Grill. Although you can do this without any seasonings, my

preference is to cover the selected slab in either Prudhomme's Meat,

Poultry or Seafood Magic seasonings as appropriate. One bottle (which does

keep for awhile) has all the different complimentary spices so I don't have

to think or measure. Accompany it with a salad or steamed veggie and you

have a quick, yummy dinner that's easy to clean up after.

2) Getting the meat guy at Whole Foods to put about 3 pounds of the cheapest

cut of some very lean New Zealand beef in the meat grinder and then putting

the ground meat in the slow cooker with one jar of (no-avoids) pasta sauce

and a bunch of spinach for a few hours. I add a bunch of cayenne pepper

about a half an hour before it's done because I like it to have a bit of a

bite, but it's optional. I put about three days worth in the fridge and

freeze the rest in individual serving size containers. Perfect for bringing

lunch to work, too.

I'm also very fortunate to have a Whole Foods (health food market) and

Gelson's (gourmet supermarket) very close by which have wonderful hot food

counters and salad bars.
