Are you familiar with his research, and do you have an opinion of his diet plan? Answer [Dr. Ornish]: Dr. Walford has been a pioneer in studying the aging process. The only strategy consistently found to lengthen the life span of animals is caloric restriction. In some of Dr. Walford's pioneering studies, he found that the life span of rodents could be prolonged substantially by limiting the amount of calories available to these animals. (Many of us would prefer to decrease the life span of rodents, but that's another issue. ...) The problem with caloric restriction, of course, is that you get hungry. I believe that the most effective way to restrict calories is to reduce the amount of fat in your diet. Since fat has nine calories per grams whereas protein and carbohydrates have only four calories per grams, when you reduce your fat intake from 40% to around 10%, then you can eat the same amount of food yet consume far fewer calories without feeling hungry or deprived. The other way to reduce your intake of calories is to decrease the amount of simple carbohydrates in your diet. You can only eat so many apples before you're full, because the apple is so rich in fiber. But you can consume virtually unlimited amounts of sugar without feeling full at all. One bottle of soft drink contains up to 14 teaspoons of sugar! The diet Dr. Walford recommends is similar to the one I advise.
