I had been using aluminum-free baking powder for some time, so I assumed baking powder was what was being written about. When I checked the contents of baking soda packages, the only ingredient listed was U.S.P. baking soda. So I am pretty sure, all things considered, that baking powder, not baking soda, is what should be mixed with the maple syrup.
