Guest guest Posted November 19, 2004 Report Share Posted November 19, 2004 1) Meat is cooked in crockpot for 6-12 hours. 2) Meat (and bones) are removed. 3) Remaining liquid is poured in bowl and refrigerated. 4) Within hours, fat has risen to the top and can be separated from underlying gelatinous material. 5) Depending on amount of liquid added at beginning, weight of gelatinous material will vary. Question: How does one calculate the amount of protein in 100 grams of this gelatinous material? Assume liquid was strained through fine mesh before refrigeraton? But gelatin is the one animal product that does not have all the essential amino acids. Steve >>> As JW already mentioned, you may only make an educated guess and gelatin does not have all the essential amino acids. w1) weigh the meat and bone before putting it in the crockpot w2) when you remove the meat and bone, drain and weigh it again. w3) weigh the fat that you remove. The variable is the amount of water in the meat before and after boiling, but *assuming* they are comparable, the weight of dissolved substance (gelatin) = w1 - w2 - w3. Gelatin is mostly collagen. Glycine and proline account for about 50% of the amino acids in collagen. Seven grams of gelatin gels two cups of water (Knox clear gelatin).
