So far I've not seen true yams in the stores.

I'm not sure I want to eat anything raw or even cooked that might be toxic. If it has to be cooked, I wonder HOW LONG? Then lot's more questions.

What's so great about a yam? Some chemical that's not in a sweet pot?

Reminds me of the time someone tried to feed me rhubarb.

Here on the left hand side of the country, I do see 'Garnet Yams' in the local stores. I've found these and others (no name associated to them) to be sweeter than the sweet potatoes I've tried. IOW, I don't need to add sweetening to them to enjoy them. I cook them long enough to be soft; they are easier to mash that way. Maybe I need to be more careful.
