It is not saying olive oil is healthy in and of itself. I would prefer to state it that the FDA is saying that olive oil appears to be less unhealthy than saturated fat, since the benefit is claimed if two tablespoons of olive oil is used to REPLACE two tablespoons of saturated fat. Two tablespoons of pretty much any type of oil contains 250 calories. So if someone was to eat an additional two tablespoons of oil daily they would put on an extra 26 pounds a year. We are told that olive oil, in additon to the fat, contains 'magical antioxidants'. It may, but the Nurses' Health Study showed only rather small benefits for those who consumed monounsaturated fats, compared with those on an average (poor) diet. Rodney. "Researchers say the most benefits are achieved by substituting olive oil for other, artery-clogging fats like butter and animal fat in your diet rather than just adding more olive oil. Saturated fats come mostly from animal products -- meat, poultry, and dairy. They also come from vegetable oils, such as palm and coconut oils. Saturated fats increase LDL "bad" cholesterol levels and increase the risk of heart disease."
