Here are a couple of papers from the Rush Institute for Healthy Aging in Chicago. Table 3 in the first paper shows maximum protection from Alzheimer's by 14.5g/day of omega-6-polyunsaturated fat as the median of the " high " polyunsaturated group. That is about one tablespoon of safflower oil per day. Trans fats appear to be detrimental even at low levels of 2.3g/day (a daily order of french fries fried in partially hydrogenated oil).
