Francesca,

I agree that the WAP people are nutjobs. For example, they promote

absurd products to remove chlorine from tap water. (One design

appears to swirl the water before dumping it into a glass.) However,

I suspect they are onto something with fermentation. I have had good

subjective results from using a probiotic called Culturelle. It

might be cheaper to eat food that was rotting with the proper flora.

I once tried adding the powder from a Culturelle capsule to a gallon

of milk. I kept it in the refrigrator as I drank the contents.

Later I left the last 1/4 inch of milk unrefrigerated for a few

weeks. A white coating developed on the bottom and the bottle

smelled cheese-like. I did not drink it.
