You can add all sorts of produce and to the proportions desired by doing this. Add some salt (or don't), cumin and curry and I think it's rather tasty, although some, like my mother, tease me and call this baby food. I think it's a good idea, even though the produce may lose some of its nutrients in the cooking process. Today, I made one with soy beans, brown rice, sweet potatoes, broccoli, tomatoes, mushrooms, peppers, beets, beef, garlic, ginger, salt, cumin and curry. It will last me a while and I froze a lot. It should also save me cooking time as I begin into a busy semester. I just thought this was an easy to prepare, healthy idea, particularly if one doesn't mind the consistency. First, make sure you put in it all the things you believe to be the healthiest - whether or not they are thought of as supposed to go in soup. Second, there seems to be only one item in your list that could qualify as a 'leafy green vegetable', broccoli. How about adding spinach, or romaine, or kale ............ or some of each? And third, if I were making it I would replace the soybeans with soy protein - there is a lot of fat in soybeans that you really do not need, imo; reduce the potatoes and increase the beets - many fewer calories for the same bulk; and replace the brown rice with rice bran, or oat bran or wheat bran or wheat germ, or psyllium, or some of each. Many of these latter items will absorb water so you will have to add more of that and fill you up better with fewer calories. Rodney. > I've been into pureed soups lately.
