This is perhaps a useful object lesson about evaluating web advice.. Even

otherwise good advice can be so poorly presented as to be

questionable.

I had inadvertently arrived at a practice that agrees with what " perhaps " is

their advice (to not handle raw meat).

The risk from this may be overstated but we need to be aware that pathogens are

present and deal accordingly.

Tony: how can this be? If cooking the meat kills any previous

contamination , then handling it one more time won't matter .

And if your hands get contaminated by washing the meat, then why don't they

say outright: " Don't handle the meat - use a utensil to transfer to pan and

then be sure and wash that utensil " - or some such warning (#2 below).
