Guest guest Posted February 15, 2005 Report Share Posted February 15, 2005 Well, what I mean is that I have read several studies (I'll try to give you the references) where they fed rats (in some of them) and men (in other ones) with refined olive oil, extra virgin olive oil, and other different sources of MUFA, and they just found that the thing protecting arteries and preventing cholesterol to oxidize was the *extra* compounds (phenols, antioxidants...) in the evoo apart from its FA profile. Yes, there was not MUFA, but the other stuff extracted from the olives when the oil was not refined what was doing the good work (preventing arteries from estretching and stiffing after meals, helping NO2 to be produced in blood, cleaning cholesterol from arterie's walls to the liver...). I wouldn't have guessed that was the case. Nor, probably, would those who advocate Crete as the epitome of the Mediterranean Diet. My GUESS is that the beneficial CVD aspects of the Mediterranean Diet (which seem to be nowhere near as beneficial as the japanese diet) are a consequence of the fish and wine they consume, and a lower caloric intake, rather than the oil. But of course I don' know. We just have to try to make sense of the study results that are reported, not all of which agree with the others. Then we place our bets.
