I take my chocolate/cocoa unsweetened either in the solid squares sold for baking (which I melt and add sucralose) or in powdered unsweetend form to which I add water and sucralose. Both yield a lucious fudgy hot chocolate sauce. But I go for the pure cocoa so that I can control other ingredients.... just my preference. The brand I buy is Chatfields & I get it at Whole Foods Market. This brand purports that it is not alkaline or dutch processed. I've never been able to find an opinion about whether this process is better than the normal dutch processinig used on all other brands I see. (just this one ingredient listed) Nutrition Facts: Serv Size 1/3 cup; Calories 60; [i'm only using 1-2 tsp at a time/per cup] Total fat 3g; Sat fat 2g; Cholest 0mg; Sodium 5mg Total carb 16g; Fiber 1g; Sugars 0g; Protein 5g; Vitamin A 0%; Vitamin C 0%; Calcium 6%; Iron 20%. I don't know how many tsp are in 1/3 cup, but my 1-2 tsp is just a fraction of 3g. Not very much fat or calories IMO. Wonder if the difference is related to different processing. If true, I would speculate about other " unknowns " that processing might eliminate/preserve.
