Olive oil, coconut oil, nuts, avocado, organic butter? What about protein? Are you eating enough protein for your weight? Are you dealing with hashimoto's ? Have you considered going on a parasite cleanse? You might have some nasties stealing nutrients from you. I've heard good things about Humaworm from curezone.
