Then I coat it with rice flour mixed with garlic powder and herbs (dill, tarragon, rosemary - choose one you like). Bake it in the oven at 350 degrees - about 20 -25 minutes. I place it on a teflon sheet so it won't stick to the baking sheet. Time will vary depending on the thickness of the fish and heat of your oven. I eat it with fresh salsa - no added oil. If you want crisper chicken, cook it in a frying pan with butter or olive oil. You can also put the oven at 450 - 500 degrees and it will cook faster. Fish flakes when a speared with a fork. I often marinate it and cook shish-kabob style (it cooks faster), I put the vegetables on different skewers - as they have different cooking times.. I also don't like to heat my house up too often in the summer. It's still 95 degrees here almost every day. Yes, you can bake chicken in the same way - I will often put it in a covered casserole so the juices don't evaporate. Keeps the chicken moister too. Use your favorite herbs here too, just pick one or two ( basil, ginger, thyme, tarragon, etc.) Cook the chicken 30 - 45 minutes. It depends on whether there are still bones, or is it boneless. I used to have lovely (very expensive) videos on chair yoga, chair qi gong and tai chi - but my kids tornadoed my house in Nov last year while I was in hospital after a stroke and in no position to chat - tossing out everything they thought I did not need after that ....AAAGH, they basically got 99% of it back to front :-( They even tossed out ALL my lifetime of accumulated specialist medical reference books, case files of unique conditions I had successfully treated and wished to publish to finance my retirement - etc. They decided I could look any medical stuff up on google! (Both are computer professionals, do not have a clue what I do in a day.) ANd they kept five empty dollar-store notebooks - nice and empty and " usable " you know - and tossed all the " used up " ones full of junky writing (my invaluable case notes over the years) - three 6 foot book cases full...all categorized to publish by medical subject category and species.... (It all went to the city dump). It was hard not to just quit and have another stroke on the spot when I got home from the Hosp and saw my entire lifetime of work and future income all gone.... Anyway - water under the bridge so I am minus " stuff " of any useful kind, including all my kitchen appliances they decided I would not be able to use any more ...so toss em ..... and make more room in this tiny house to turn around in my wheelchair... Fish needs to be cooked till it JUST starts to flake apart easily as opposed to acting solid. Test somewhere in the middle with a fork to see if it is ready for the layers/flakes to separate/flake. Fish is awful if overcooked, or dried out - so use plenty of butter/ghee or some such, and when in doubt, take it off the heat - you can always put it back :-) Fish can be fried, baked, microwaved, grilled, whatever ... but try to cook it evenly for all thicknesses. Pale colored fish turns from almost transparent when raw, to opaque white as it is cooked, and pink fish like salmon goes more opaque as well - as a guide while cooking. Cook it at lower heat, it burns easily, and cooks rather fast compared to meat. Be careful that thin parts do not get overdone while thicker areas are underdone. Cut it up so you add thin parts later to the cooking. If you cook a big chunk like a whole salmon, wrap in aluminum foil with just a bit of butter/ghee and garlic stuck inside the fish - no seasoning. Bake it well wrapped to keep all the flavor and juices in, (seasoning draws them out and the fish gets dry) don't let fish dry out when cooking. If some part is very thin, cut the fish in half, and set it up so the thin bit is tucked under a fat bit before baking in the oven or on a grill. Fresh fish needs little or no seasoning besides butter and garlic and maybe lemon juice. I never salt mine, though I add spice (eg cayenne or curry or coriander or ginger) to some fish that needs more flavor - or for variation.
