Ingredients:

1 cup finely diced onion

1 cup finely diced carrots

1 cup finely diced green cabbage

1 cup finely diced red or green bell pepper

1 cup finely diced radish

1 cup finely diced tomatoes

1 cup of roasted and coarsely chopped peanuts

Salt and pepper to taste

1 tablespoon freshly squeezed lime juice (1/2 lime)

Directions:

Mix all ingredients in large bowl except salt, pepper and lime juice.

Add salt, pepper and lime juice, to taste.

Chill and serve.
