It wouldn't be the fruit; it would be the sulfur ON the fruit. That would kill your water grains eventually. Maybe that is what Dom is referring to. He said that fruit during the first fermentation inhibits grain growth. He also explains his theory of why. However, he mentions a water kefir recipe I would like to try with ginger, molasses, sugar, egg shells and a few other things and I couldn't find the actual recipe. I use plastic water bottles because I heard too many horror stories using glass. I actually chill my water before adding the sugar. I just use my well water at the temp it comes from the tap (I live in Michigan, USA and it is winter so the tap water is cooler right now) and shake the jar with the sugar and water until most of the sugar is dissolved then I add my water kefir grains. I then brew it at room temp (about 68 degrees F) for 24 hours, remove the grains and add any fruit/herb/fruit juice/tea flavorings and brew for another 24 hours before putting it in the fridge. My grains are very happily multiplying like crazy so it must be an ok way of brewing. So far my favorite flavor has been adding fresh pureed strawberries and candied ginger to the second brewing. The sugar is still consumed some even in the second brewing by the kefir critter left in the kefir so it comes out just softly sweet. Yum! I seconded brewed a batch with fresh-frozen wild blueberries last night and cannot wait to try it. Guest guest Posted March 25, 2011 Report Share Posted March 25, 2011 On Dom's site, he suggests brewing with a sealed lid for 2 days leaving at least 2 cups of air space. Then transfering to another bottle sealed for one day before refrigerating. I have been doing this for the last few times and am getting great fizz, but my grains are multiplying more slowly. I have been putting my 2nd ferment in 33.8oz plastic bottles. (thats what I had) He also suggests adding 1/8t of baking soda. Does anybody know why? I have searched the Adama site for information on water kefir for type O and haven't figured out whether or not it is an avoid. I don't know if I am a secreter. My body doesn't seem to like water kefir but friends have encouraged me to continue making it for probiotic health. I've just made my 6th batch and I can't get the sweetness to a level I can tolerate. The first couple of batches I followed recipes, using fruit beneficial to type O, and the grains multiplied and were healthy but the resulting drink was too sweet for me. Then I reduced sugar to the point that the grains were dissolving due to lack of food but it was still too sweet. Brought the grains back to health and tried letting it ferment till it almost became vinegar but then it had a scum on the bottom that I didn't like (yeast?) and the drink still tasted sweet. Sugars have always been an issue for me and I don't tolerate much fresh fruit intake, fruit juice, or dried fruit. I get a sinus ache almost immediately after drinking the water kefir I make and have noticed thick mucus in my throat to the point that I need to cough it up. I have had an issue with Candida in the past and have sensitivities to yeast. Writing this I realize that it is time to stop making and ingesting water kefir. If it is so wonderful for my gut, why does it make me feel so bad? Can anyone tell me whether it is an avoid? Share your experience with water kefir? Thank you. A half cup of it makes a nice cereal option, if you eat cereal, with the right things added for example. Personally I like to use it as a thickener in soups and stews and mixed food inventions in the wok. I " wok " a lot of meals - start with onions and maybe masala spices, add some kind of animal protein (meat/fish/shrimp etc), some kind of green and red veg, and a little of some kind of " other " veg with more oomph, like sweet potato, rutabaga or parsnips etc, plus a dash of teff, millet or quinoa, a bit of rice bran and lots more flavoring from herbs, and spices, some red wine and water. I like a thick enough to cut, soup consistency. Juicy food to eat with a fork :-) Just add things in the reverse of cooking time needed, order. I stash some in the freezer for other meals to just heat and eat. No two inventions are the same. But the " formula " is similar. I usually have a variety of inventions in the freezer.
