Nut Butter Cookies

1 cup nut butter

1 egg

1/2 cup honey

(salt to taste, if desired)

Mix all ingredients together well (a food processor is very handy).

Roll about a teaspoon full of dough into a bal and place onto a parchment

paper lined cookie sheet.

Use a well-greased fork to flatten the cookies, making a criss-cross design

on the tops. Bake for 8 minutes at 350 degrees.

LUCY'S MACAROONS

3 egg whites

1/8 teaspoon salt

1/3 cup honey

1 teaspoon vanilla

1 1/4 cup unsweetened coconut

1. Preheat oven to 300F.

2. Mix egg whites and salt, beat until stiff.

3. Slowly add honey to mixture, beating constantly.

4. Fold in vanilla and coconut.

5. Use mixture to fill paper muffin cups--fill each cup halfway.

6. Bake for about 25 - 30 min., or until tops are lightly browned.

CECILIA'S MACAROONS

4 large egg whites

1 cup honey

450 grams dessicated coconut

1. Beat the egg whites with an electric whisk, until very stiff.

2. Gently warm the honey until it becomes runny.

3. Drizzle the slightly warmed honey into the egg whites, while beating

continuously.

4. Gently fold in the other ingredients, then pipe or spoon the mixture in

small blobs onto a greased baking tray.

5. You do not need to actually BAKE them, instead you dry them out. Oven

temperature: 120 degrees Celsius, until the blobs are crisp and dry.

6. This will take a long time - at least an hour. Then turn off the oven and

allow the food to cool inside - this adds even more drying time.

COOKIE PRESS COOKIES by Alice

1 cup ghee

1 cup honey

1 egg

2 tablespoons water

1 tsp vanilla extract

1 tsp baking soda

4-4 1/2 cups flour added it )

Blend all ingredients adding the flour last until it is the right

consistancy (until the dough has a VERY stiff consistancy, like dough that

you would roll out.)

Put cookie dough in cookie press and press out desired shapes onto cookie

sheet.

Bake 10 minutes at 350.

Watch carefully so that it dosen't get too brown because they burn easily.

MACAROONS

3 egg whites

1/3 cup honey, warmed

1/2 tsp salt

1 tsp vanilla

1 1/4 cups coconut

Preheat oven to 300 degrees.Using an electric mixer, whip eggs white until

they form stiff peaks.

Add honey, salt and vanilla and mix until well blended.Mix coconut into

mixture. Bake for 25-30 minutes in cupcake wrappers in a muffin tin.

MERINGUES by

4 egg whites

dash of salt

1/2 cup honey

parchment paper

Make sure your bowl and whipping attachment are dry as one drop of water

will ruin your meringues. Let the eggs sit out on counter until room

temperature. Separate eggs by putting the whites in a bowl and either

throwing away the yolk or saving it for a custard.Whip up the egg whites

until they are white and stick to the spoon. Slowly drizzle the honey in and

add a dash of salt. Spoon small dollops onto parchment paper that has been

fitted to a cookie sheet. Only use parchment paper, as all others will cause

meringues to stick.Turn oven on to 150. If your oven does not go that low,

turn it to the lowest setting. You can turn your oven off for an hour, then

back on for 5 minutes and then back off again for another hour to maintain a

very low temp. and do this until cookies are done.Cookies should be dried

out, not baked and this process goes for maybe 2-3 hours. If the meringues

start to turn brown on the edges, your oven is too hot and you should turn

off the heat and crack the oven door open. Your cookies should turn out the

color of honey, but a lighter shade, in an all over even color. You need to

monitor this by taking peeks in at them every half hour. Meringues can be

tempermental
