I just checked his site and he says Spelt is an Avoid for NS. However, I

don't know what S I am, but he did say most Explorers are NS.

Can I readily sub another flour for this with the exact measurements?

Spelt is an avoid for non secretors, but a superfood for explorers. I'm both and

I seem to be OK eating a small amount of spelt, like a slice a day, sometimes

two, sometimes none.

I am so supersensitive to what that I have not dared to try spelt.

Yeah, it's hard for me to tell b/c I was sort of tired before I ate it. I

did run on the treadmill for 30 minutes though.

Ther are slight differences in amounts of moisture, but I don't remember

exactly which is more and which less.
