Egg White Fruit Frittata

YIELDS:1 servings

4 Egg whites

Low-fat cooking spray

3 tb Cantaloupe cut into 1/4-inch -dice

3 tb Honeydew cut into 1/4-inch -dice

2 Whole strawberries; trimmed -and thinly ; sliced

10 Blueberries

1 tb Raisins

1/2 Banana; sliced

1 ts Honey; optional

Whip egg whites until almost stiff. Spray and heat a 7-inch non-stick

skillet or omelet pan over medium heat. Add half of the fruit to the skillet

and saut?, stirring, for about 30 seconds. Add the whites and let them cook,

without stirring, for 10 seconds. With a wooden spoon, move the egg whites

around and cook another 10 seconds or until set and fully cooked (don't move

them too much or you end up with scrambled egg whites). Slide the frittata

onto a dessert plate and spoon remaining fruits over the top. Drizzle fruit

with honey.

and then bake it.

HOT OFF THE GRILL FRUIT KEBOBS: 4 kebobs

4 – 12 inch wooden skewers

1 Red apple – toss with lemon juice

1 Green variety but ripe apple– toss with lemon juice

1 Pear– toss with lemon juice

2 Bananas– toss with lemon juice

Juice of 1 lemon

½ tsp nutmeg

½ tsp cinnamon

1 tsp honey

1 C caramel sauce *

½ C chopped pecans

Cut the apples, pear and bananas in 8 slices removing the seeds and centers.

Cut each banana into 4 pieces. Toss with lemon juice. In a small bowl mix

together the nutmeg, cinnamon and

honey. Alternate the fruit on each wooden skewer. Red apple,pear, banana,

green apple, etc., etc. Sprinkle the sugar mixture over the kebobs. Preheat

the BBQ grill to medium heat. Place on the kebobs and cook for 2 minutes on

each side. Remove and place on a platter. On the burner side of the grill,

heat 1 cup of the caramel sauce in a pan over low heat until warm, not

boiling.

Pour the warm apple-dip over the kebobs and top with chopped pecans. *Carmel

Spinach Puree

Boiled and strained the baby spinch, put in cuisinart, Added a very small

quantity of coconut oil, old fashioned cider vinegar, lemon, sea salt and

fresh pepper, all of then to taste, and it is just delicious. (if you can

tolerate all those additives and yogurt.) It is also great with some yogurt

spooned on top.

Appke Sauce

Boil peeled and cored apples until soft, add to cuisinart, with a small

amount of honey, and some

cinnamon and nutmeg and salt. Use a variety of apples for more flavor.

Priscuytto snack

Lay the Prosciutto on a long slice of cheese and add Dijon mustard and

capers. I roll that up secure with a dampened toothpick, squeeze on a bit of

honey, dredge the roll in almond flour and bake on parchment paper in a 350

oven until the cheese bubbles and the almond flour begins to brown. This

must be cooled for a few minutes to set and so as not to burn your tongue.

Cheese " Chips "

A baking sheet

Parchment paper (although it might work without)

Swiss cheese slices (here in Canada, we buy the Maple Leaf packages)

Salt

Preheat oven to 350

Cut cheese slices into threes so you have rectangles about 1 " x 3 " . Place

slices onto parchment lined baking tray. Heat until the cheese is bubbling

like crazy, wait a minute or so, and

then. Turn the oven off -- leaving the cheese in for a few more minutes.

Remove from oven, sprinkle with salt and let cool. You might have to

experiment a bit to find the right level of crunchiness. For an extra

special treat, make a dip by whipping Friendship brand Farmer cheese in the

blender with salt and pepper (you can even add some green onion or garlic to

the dip)!

Recipes to make Chicken tender

Marinate it in oil, wine and herns overnight. I also make stewedchicken

balls from ground chicken and simmer them in tomato juice. Aside from egg

white omelets, I don't use eggg whites

much and sometimes have an allergic reaction.

MoistTender Chicken

Use oil and lemon juice like salad dressing. During the intro diet just the

poached meats and then added in cooked spinach and the pureed cauliflour

w/butter. To poach, you cover the meat/fish in cold water, bring the water

to just shy of boiling. You don't want the water to bubble, just sort of

remain right below a simmer. Chicken usually takes 20 min or more I think,

and should float when it's done. With the fish, we used the Joy of Cooking,

and they say to bring the water to the boiling point, and then turn it off,

and leave the fish in it for 10 minutes. We use a frying pan with fillets in

it filled with water for the fish, and a regular pot for the chicken.

Without anythign else on it, it's bland to be sure, but definitely not dry.

Make Meat Tender

Cut beef into large 1 inch chunks and make it in a stew in a cast iron pot

with a lid. Cook the stew in the oven rather than on the stove because that

seems to make it more tender, at about 350 degrees for about 2 hours.

Peach yogurt Sherbet

1 pound (4 or 5) ripe peaches, yields about 2 cups prepared fruit

1 small medium ripe banana

1 cup plain, low fat yogurt (I used my very rich fat filled yogurt instead)

2-3 Tblsp honey

2 tsp vanilla extract

Blanch the peaches in boiling water for 20 seconds. Refresh under cold water

and remove the skins. Remove the pits and slice. Peel and slice the banana.

Freeze the fruit in plastic bags. (I chopped the fruit up first before

freezing) When frozen solid, remove from the freezer and pound to break into

chunks. ( I found no need to pound, it simply broke into pieces in a few

minutes.) Place the yogurt, honey, and vanilla in a food processor. Add the

frozen fruit. Using the pulse action, process until the fruit is mashed.

Then turn on the processor and blend until you have a smooth puree. Serve as

is or return to the freezer. It will keep several weeks in the freezer.

Creamy Lentil Soup

1 cup lentils (rinsed and soaked overnight)

1/2 quart water

1 quart homemade chicken stock

2 slices bacon

2 stalks celery

1/2 green pepper

1 yellow onion

salt

pepper

cayenne pepper

1/2 cup homemade yogurt

2 Tbsp. honey

In pot, cook lentils, water and stock. Saute bacon, celery, pepper and onion

(Make sure bacon is very crisp). Add to pot. Cook 1 hour. Put all of soup

through food processor. Return to pot. Add salt, pepper and cayenne to

taste. Add yogurt and honey. As a garnish, saute onion, chives and rosemary

in butter. (This soup freezes well, too)

CRUNCHY ALMOND CHICKEN

1 cup ground almonds

1 clove garlic, finely chopped

1/4 teaspoon ground ginger

1 teaspoon salt

1 teaspoon paprika

1/4 teaspoon ground cumin

1/4 teaspoon pepper

2-3 pounds chicken, cut up (Note: I used boneless, skinless chicken breasts

and

cut them into small pieces, much the size of " McNuggets " )

1/3 cup butter

Mix almonds, garlic, ginger, salt, paprika, cumin and pepper. Dip chicken

pieces into butter; roll in almond mixture. Place chicken in ungreased

baking pan. Cook uncovered in 375* oven until thickest pieces are done, 45

to 60 minutes.

CURRY POWDER from Sue

4 tsp. ground cumin seeds

4 tsp. ground coriander seeds

4 tsp. turmeric

1 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. cayenne

1/2 tsp. black pepper

1/2 tsp. ground cloves

1/2 tsp.'s ground cardamom

Stir ingredients together well, and store in a small glass jar.

Crust for Casseroles

For a thick delicous crust on casseroles, meat and chicken pies, Shepherds

Pie , " Noodles " and Cheese " and seafood dishes: Spoon on a thick layer of

almond flour. Add desired seasonings and a generous amount of grated

Parmesan Cheese. Spray with oil. bake accroding to recipe instructions for

yoiur dish.
