Guest guest Posted December 17, 2008 Report Share Posted December 17, 2008 Spelt flour does not absorb as much moisture as wheat flour so you have to add a bit more flour to whatever you are baking/cooking. I think it is usually about 1/4 cup extra for every cup of flour the recipe calls for. I have experimented with this in the past and found it to be generally true.
