SALAD

1 pint organic cherry tomatoes

2 cups black, pitted olives

1 cup green beans, chopped large

DRESSING

Approx 1/2 cup olive oil

1 garlic clove, crushed

About 1 tablespoon chopped fresh oregano

1 squeeze of lemon juice

GARNISH:

Sprig of fresh mint or oregano

Place tomatoes, olives, and green beans in medium bowl. Place olive oil,

garlic oregano, and lemon juice in small bottle and shake. Pour dressing

over salad and toss well. Garnish with sprig of fresh mint or oregano. The

aroma is divine; the taste is even better! What a quick, easy recipe for

guests. Of course the recipe can be doubled, or even tripled, for larger

crowds.

MARTIAN PUDDING

4 ripe Haas avocados (black skin)

Juice of one large lemon

1/2 tsp salt

1/4 teaspoon white pepper

1/2 cup honey or pear sauce or saccharin equivalent

1-2 teaspoons vanilla extract

Peel and pit avocados. Add lemon juice and whip smooth with a hand mixer.

Add salt and pepper and whiz thoroughly. Stop here for Avocado Mayonnaise,

and use in most dishes just as you would mayonnaise. This makes a dandy mild

guacamole, which you can spice up with a bit of onion, garlic, and cumin if

desired and tolerated. However, if making Martian Pudding, I would recommend

against the onion, garlic, and cumin. <grin> To continue to Martian Pudding,

add honey or pear sauce and vanilla, and blend thoroughly. Chill, and serve.

Makes about four portions, so is easy to scale down if you don't need that

much at once. It's amazingly sweet, mild, and seriously satisfying for a

sweet treat, besides being egg and nut free. Even if it IS green.... Note:

putting salt and pepper in a sweet dish may seem odd, but I redid the dish

without it, and decided it added a depth to the sweetness which I found

fascinating.

When I traveled in Europe, I saw them eat cold salmon and liverpate.

2 oz. cooked & pureed butternut squash

2 oz. cooked pureed pears –APPLESAUCE WOULD WORK TOO

1 tsp. nut butter of choice, warmed so it's easy to mix.

Mix all together well. Makes 1 serving.

I make other 'colours'..same basic recipe, but substitute avocado with any

of strawberries, blueberries, cooked carrots, cooked squash, cooked green

beans etc. If made with frozen

bananas, it stays cold in his lunch. [other than maybe the strawberry, you

won't get me near them though!]

LIME PUDDING by

1 ripe avocado

3 Tbsp or more fresh lime juice

1 Tbsp honey

a few drops Frontier vanilla

(optional) a few Tbsp yogurt

Mix all ingredients until smooth

2 C squash (cooked and mashed)

4 oz applesauce

1/8 C honey

cinnamon and nutmeg

Bake at 350 for 30 minutes. Very yummy.

pumpkin pudding

1 1/3 pumpkin –CAN USE WINTER SQUASH INSTEAD

1/3 T honey

2T butter

2 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp cloves

mix and serve. or freeze in ice pop molds. layered (and pretty) with dripped

yogurt mixed with honey.

EGGLESS PANCAKES

1 chicken breast-thawed

2 large pears-peeled

some baking soda

salt

blend until it is the same consistency throughout. pour and shape with spoon

on non-stick grill. Try to make them thick. cook at about 350 degrees until

dark brown on both sides-try not to

smash them down.preheat your oven at 425 degrees. Put pancakes in a pan,

covered with

aluminum foil. Bakes for 15-20 minutes. I just do this to make sure they're

completely safe to eat.

You can make them thin if you want. They also microwave up nicely.They

actually taste better microwaved, because it makes them a little less dry.

If you want to reduce the number of pears and just add water or juice-that

would work too. Just test it. It works very well though.

EGGLESS MUFFINS

I use 3 chicken breasts

4 cups butternut squash

I use 4 pears

baking soda

2 cups of water

a little salt

4 tablespoons coconut oil

should make 24-30 muffins

DARLENE'S APPLE CRISP - McIntyre

5 apples, peeled and sliced

2 pears, peeled and sliced

1 cup almond flour

2 tablespoons honey

2 tablespoons butter

cinnamon to taste

1. Mix apple and pear slices together in 9 " pie plate, sprinkle with

cinnamon.

2. In a bowl mix flour, honey, and butter together.

3. Spread mixture of apple and pear slices.

4. Bake at 350 degrees for 30 minutes or until bubbling.

5. Add cranberries or raisins for variation.

Yogurt pie (adapted from 'It's-a-snap cheesecake from the Knox Gelatine

box)

1 envelope plain gelatine

1/2 cup honey

1 cup boiling water

16 oz of dripped yogurt

1 teaspoon vanilla extract (optional)

SCD nut crust if desired

1. Mix gelatin and honey in small bowl. add boiling water and stir until

gelatin completely dissolves, in about 5 minutes.

2. Beat yogurt cheese an vanilla in large bowl with mixer until smooth;

slowly beat in gelatin mixture. Pour into prepared crust if desired or pour

into greased pie plate.

3. Refrigerate until firm, bout 3 hours. Garnish as desired.

CHICKEN SAUSAGE

3 pounds fresh ground chicken

2 teaspoons salt

1 tablespoon water

pinch of pepper

pinch of thyme

pinch of sage

pinch of cayenne

Instructions

1. Stir all ingredients together. Mix.

2. Shape into 3 rolls. Roll snugly in foil and store 24 hours in

refrigerator.

3. Poke holes in top and bottom of foil.

4. Arrange on tray and cook in 300 degree F (150 C) oven for 2 hours. Remove

from foil.

May be sliced for sandwiches or eaten with crackers. Can be stored in

freezer for up to 6 months

Cookie using Chicken

2 chicken breasts, boiled, cooled and food processed

1/2-3/4c pear sauce ( homemade)

3/4 c squash ( cooked and mashed)

1/2 c left over cooked veges() I use broccoli often

1 avacado

1-2 tsp cinnamin

1/4-1/2 tsp nut meg

2-3 tsp legal vanilla

1/3 c honey ( more would be good, but my daughter can't do it)

1/3 or so c palm oil shortening--could use butter if you can do dairy

Food process all of it till it's all mixed together and look like a slightly

less than stiff cookie dough. Use parchment paper and drop small dollups on

the cookie sheet. wet fork and double cross them to flatten. cook on 350 for

UP TO 50 min. I find a stoneware pan works best for this, but you can use

others, just watch for the bottem so it doesn't burn. These are great.. you

can freeze them ahead.. but once they are thawed I always keep them

refrigerated because they have chicken in them. I have also been thinking

you could make variations on this, and if you could use egg you could put

that in as well.. just thoughts.

Zucchini Noodle

6-8 medium zucchine (or 1-2 medium zucchini per person)

Peel zucchinis and remove stem tops. Using the vegetable peeler, scrape

strips oof the entire length of each zucchini. (For easier peeling, insert

a metal shish kebob skewer down the center, and hold onto the skewer while

scraping the " noodles " from the zucchini.) Keep peeling until the entire

zucchini is in shreds. Or, if even zucchini seeds are a problem, stop when

you reach the seeds and freeze the remaining chunks for vegetable broth.

Pile the zucchini " noodles " on a buttered baking sheet and cook in a

preheated 215^o F oven for about 25 minutes. The objective of the low

temperature is to cook the zucchini while evaporating as much of the excess

water as possible. Serve topped with plain butter and a little salt, or

with any of your favorite sauces such as Mock Hollandaise.

Lemon Poppyseed Muffins makes 12 muffins

3 eggs, sperated

1/2 cup honey

1/4 cup melted butter or oil

1/2 tsp baking soda or whipped 3 egg whites

1/4 tsp salt

1 Tbsp lemon juice

1 Tbsp grated lemon rind

1 Tbsp poppyseeds

3 cups almond flour

Preheat oven to 325. Line a muffin pan with paper liners. In a large mixing

bowl, use an electric beater to thoroughly combine eggs, honey, butter/oil,

baking soda, salt, and lemon juice. Stir in lemon rind and poppyseeds. Stir

in almond flour, a cup at a time, to make a fairly thick batter.

Spoon batter into muffin cups, using wet fingers to lightly press down any

bumps on the tops before baking. Bake for 25-30 minutes, until golden

brown, springy to the touch, and a toothpick comes out clean. These will

keep unrefrigerated for a week, longer if refrigerated.

Date Bars

Using dates, almonds, pecans and coconut (whatever other dried fruit you can

fine.) Dump desired amount of each into a food processor and spin until it

reaches your desired texture. Lightly coat a spatula with oil or butter and

press into a baking dish. Cut to desired size.
