Do not use olive oil. 1. In food processor, mix egg yolks, vinegar, salt, and mustard. 2. Slowly drizzle in the oil, until desired consistency is reached. Inman <leinman@...> Coconut-Banana Muffins 3 eggs 2 t. vanilla 1/3 c. honey ½ c. yogurt 1 c. coconut flour 1 c. almond flour ¼ c. water (you could probably use juice or another liquid, too) 2 mashed very ripe bananas Optional – nuts once you’re advanced Combine all ingredients in a blender and mix. Let the batter sit for 5-10 minutes to allow the coconut flour to absorb liquid. If the batter is too thick, add more liquid. Bake at 300 for about 40 minutes. s2kredhead <s2kredhead@...> Carmel Apples CARAMEL (from the frosting recipe) 1 C honey 3/4 C Butter* 1/2 cup dripped half and half yogurt Heat these 3 ingredients to boil frequently stirring - a heavy saucepan is best. Boil for 2-6 minutes**, depending on how caramelized you like your icing, constantly stirring to be sure ingredients are well blended. Remove from burner. Add: 1 tsp. Vanilla 1 tsp. Baking Soda The mixture will bubble up when these 2 ingredients are added. Stir the mixture well. I'd let the caramel cool a bit before dipping the apples, so it doesn't cook them, because it gets really hot. Roll them in nuts and pop them in the fridge to chill the caramel. *I use less butter: 1/4 to 1/3 cup. When I use the full 3/4 cup there is some that separates that I pour off. **It takes me way longer than this to get it as dark as I want, to get the caramel flavor I like. 1/2 hour or so? Carol Frilegh <c.frilegh@...> Tomato Sauce II 12-15 pounds tomatoes A small two quart pot half full of simmering water on the stove, and a larger bowl with ice water is useful for this sauce. Drop the tomatoes, 2-3 at a time, into the simmering water and push them under with a slotted spoon for about 45 seconds to one minute. Lift out with the slotted spoon and drop them in the cold water. Repeat for all tomatoes. Change cold water for fresh chilled water as necessary. When the tomatoes are cool enough to handle, begin peeling. With a slender, sharp vegetable knife, remove the core. Turn the tomato over and cut an X in the bottom. Lift skin off and peel completely, starting from the center of the tomato. When complete, quarter the tomato, remove the seeds, and toss it into a six quart pot. Repeat for all tomatoes. Cover the pot, even if you have to squash the tomatoes down. Heat on medium-high until they come to a boil (about 15 minutes), then reduce heat to medium, uncover, and continue cooking for about two hours. Remove from heat and cool quickly in a sink of cold water. Process tomatoes in a blender, or with a stick blender. The reason for cooling before processing is to preserve the container of your blender, or your arms. Boiling tomato sauce spattered by a blender burns badly. Once processed, return to pot, and continue heating on medium until the liquid is reduced to about one third of its pre-reduction amount. Cool again in cold water, then ladle into storage containers for freezing. Makes about eight cups of very thick sauce which can then be flavored with whatever you wish. " Wizop Marilyn L. Alm " <louisianascdlagniappe@...> Lokshen Kugel (Noodle Pudding) 4 zucchini, peeled and cut into strips [size 5-6 " ] 2 eggs 1/4 cup melted butter 1/2 cup almond flour salt and pepper to taste dried parsley and basil (optional) a four slices mild yellow cheese Preheat oven to 350-375. Put half the butter in an 8 " square baking pan. Place in oven. Beat eggs, add zucchini, remaining butter seasonings and almond flour and stir gently until blended. (for sweet kugel add a little honey) Put half the mixture in the pan. If using cheese place it n top, add remaining zucchini and bake 40-45 minutes or until bottom is crisp and browned. Cool five minutes before serving. This really tastes like the original that is traditionally made with illegal egg noodles Notes: Use more melted butter if desired it will make it browne..r Add 1/4 cup yogurt of yogurt. You can use to 1/2 cup almond flour For sweet kugel just drizzle in some honey and sprinkle in Cinnamon and if desired, raisins. For savory Kugel add grated onion. When you stew or braise something, reserve the juices and simmer them down adding some almond flour and they thicken beautifully. You can add sauteed sliced mushrooms or onions for even more density.
