Smoky Quick BBQ Sauce (LSCDL Recipe)1 medium yellow onion, smoked, then chopped 8-12 cloves garlic, minced 2 cups very thick tomato sauce1/4 cup white vinegar 1/4 cup apple cider vinegar1/2 - 1 cup honey3 tablespoons Krivelshire sauce or 3/4 teaspoon K-shire spices1/4 teaspoon cloves 1/4 teaspoon allspice 1/4 cup Creole mustard 1-3 teaspoons salt (optional)1/2-1 teaspoon black pepper1/2-1 teaspoon white pepper4 anchovy filetsSmoke the onion in with whatever you are smoking, then roast. Cool enough to chop. Note: If you do not have smoking e quipment, roast an onion for use, add ¼ teaspoon chipotle to the spice mixture, and reduce the black and white peppers to one-half teaspoon each. In a blender, combine all ingredients except the tomato sauce and liquefy. Pour into the

tomato sauce in a deep sauce pan, and heat, stirring gently, until it bubbles. Krivelshire Sauce (LSCDL Recipe)6 anchovy fillets6 large fresh medjool dates2 teaspoons finely minced shallots1/2 teaspoon finely minced garlic1 - 1 1/2 teaspoon spice mixture (see below)3 tablespoons white vinegar1/2 cup dry alcoholic apple cider*1 medium bay leafSpice Mixture:1/2 tsp. dried ground ginger1/4 tsp. ground cloves1/4 tsp. ground coriander seeds1/4 tsp. ground allspice1/4 tsp. cayenne pepperIn a small saucepan, mash anchovies and then mix well with pitted, finely chopped dates, shallots, garlic, and spice mixture. Add liquid and mix. Add bay leaf, and bring to a bubble. Turn heat down as low as possible to keep mixture at a very entle bubble

(you may need to put something between the pot and the burner.) Cook for 20 minutes, then let cool slightly. Whiz until smooth in a blender or with a mixing wand. Refrigerate. Consistency will be fairly thick and won't resemble Worcestershire sauce, so don't worry. The amount of spice mixture required will vary with the strength of the anchovies’ flavor, the freshness of the dates, and the dryness of the cider you have available to you. * Finding an dry alcoholic apple cider which does not have added sugars is well-nigh impossible in the U.S. and Canada since the closure of the Barn Owl cider makers in Ontario.
