Guest guest Posted April 18, 2008 Report Share Posted April 18, 2008 SCD SEDER FEAST lIGHT MATZO BALLS2 large eggs (4 eggs for serving of 12; 8 eggs for 24 servings)2 tablespoons Olive Oil (4; 8 servings)½ cup Almond Blanched Nut Flour and more (1;1 ½ servings) as needed.½ teaspoon Salt (1; 1 ½ servings)½ teaspoon Baking Soda (1; 1 ½ servings)1 tablespoons Water or SCD Chicken Soup (2; 4 servings)96 ounces SCD Chicken Broth½ teaspoons Pepper (1; 1 ½ servings)1. In a medium bowl, lightly beat eggs with oil.2. Add flour, salt, and baking soda and stir till smooth.3. Stir in Water or SCD Chicken Soup, then let mixture stand for 20 minutes so flour absorbs liquid.4. Bring Salted Water or SCD Chicken Soup to a boil.5. With wet hand, roll about 1 teaspoon of mixture between your palms into a ball; mixture will be very soft.6. Set balls on a plate. With a rubber spatula, carefully slide balls into boiling water.7. Cover and simmer over low heat for about 30 minutes or until firm. Cover and keep warm until ready to serve.Note: SCD Matzo Balls can be kept 2 days covered container in refrigerator, or freezer and reheat gently to cooking liquid or soup.
