Homemade Date Syrup (LSCDL Recipe) For the date syrup, pit the dates -- maybe a dozen or so. Place in the top of a double boiler. Add about half a cup of water, and cover. Cook over briskly boiling water for an hour or so. Remove from heat and allow to cool somewhat before blending smooth with either a hand blender or in a regular blender.If using pitted cherries, blueberries, etc, process through a food mill to remove skins, and then strain to remove small seeds. Celeriac "Mashed Potatoes" (LSCDL Recipe)I will note that celeriac is pretty fibrous, so may not be suited for people with strictures and such like.4 good-sized celeriac (peeled

weight 300-500 grams), sliced on a mandolin. 41 stick (4 ounces) butter, coconut oil, or ghee4 ounces DCCC or really well-drained yogurt cheese (optional if doing dairy free)1 teaspoon salt1/2 teaspoon white pepperBoil celeriac slices in water, much the way one would boil potatoes. After they are tender, drain thoroughly.With a hand-blender to them (Bamix or similar. Mine's a relatively inexpensive one by Braun), whiz the cooked celeriac up nice and creamy. Add butter and dry curd cottage cheese, white pepper and salt. Again whiz with the hand blender until everything is smooth and well-blended.Variation: These were great just as they were -- I chose to add 2 ounces freshly shredded Parmesan cheese, and 4 ounces freshly shredded sharp cheddar cheese.Note: They went really, really well with turkey gravy on them. I'm betting that if anyone has a good shepherd's pie recipe that can be adapted to SCD, this would work as well or better than the cauliflower mashed potatoes. The bean paste potatoes work well. These are much, much better! Cranberry-Pumpkin (or Apple) Compote (LSCDL Recipe)The original of this recipe called for illegal sweet potatoes and illegal commercial spun-sugar marshmallows. It also used a crumble made with oatmeal, flour, brown sugar, and butter. Pre-SCD, I first abandoned the marshmallow topping, then switched to whole wheat flour. When I went SCD, I knew that I needed the whole cup of honey to help sweeten the very tart cranberries, but puzzled over how wet the mixture was with that much honey. Then I hit upon adding another

cup of nut flour to balance the honey, and some extra cinnamon to keep the spiciness up, and voila! My husband likes this so much that he takes it to his office Thanksgiving and Christmas parties.1 pound cooked pumpkin or butternut chunks1 12-16 ounce package fresh raw cranberries1 cup honey2 cups pecan flour4 tablespoons softened butter2 tablespoons cinnamon In a very large mixing bowl, stir together pumpkin chunks and cranberries, after checking cranberries for any bad ones. Add honey and mix well – it will be very sticky, and the cranberries will tend to clump together. In another mixing bowl, combine pecan flour

and cinnamon, and mix until it is an even color. Cut in butter with a fork or pastry cutter and create a crumble, evenly distributing the butter among the nut flour. Stir the crumble into the pumpkin-cranberry mix and distribute evenly. Turn mixture into a one quart casserole and baking in a 300°F oven for 45-50 minutes, or until cranberries are cooked through. Serve hot. Variations: ->Substitute 3-4 cored, peeled, chunked Granny apples (or other firm, tart apple) for the pumpkin ->Cook casserole as above. The last ten minutes, top with SCD marshmallows, and then bake until the marshmallows start to turn golden. ->Add 1/2 teaspoon nutmeg or ginger to the cinnamon. Mock Sweet Potatoes (LSCDL Recipe)3 cups baked butternut squash, drained of extra liquid1-3 sticks (1/2 - 1½ cups) melted butter½

teaspoon salt (optional)¼ teaspoon white pepper Peel and seed squashes if not done before baking. Purée cooked butternut squash pulp. Add melted butter, salt, and white pepper and whip well, to the consistency of mashed sweet potatoes.Serve warm. Note: The amount of butter used depends on how much you like. My father likes lots.
