Bring to a boil, watching that it doesn't boil over.3. Reduce the heat to low. Continue to simmer uncovered, or with a meshcover or strainer over the opening of the pot to minimize the splatter. Youwant the moisture in the juice to evaporate, so don't completely cover thepot with a lid.4. Stir occasionally, reducing the heat as the sauce gets thicker, andcontinue to cook for approximately 1 1/2 hours until it is reduced to 2 cup.5. Refrigerate for up to 2 weeks to freeze.Sent in by Baumgartner gbaum218@... Crisp and Crunchy MeringuesBeat the egg whites with an electric whisk, until very stiff. Gentlywarm the honey until it becomes runny.Drizzle the slightly warmed honey into the egg whites, while beatingcontinuously.Gently fold in the other ingredients, then pipe or spoon the mixturein small blobs onto a greased baking tray. You do not need to actually BAKE them, instead you dry them out. Oventemperature: 120 degrees Celsius, until the blobs are crisp and dry. This will take a long time - at least an hour. Then turn off the ovenand allow the food to cool inside - this adds even more drying time. MERINGUES• 3 large egg whites• 1/8 teaspoon salt• 1/4 cup honey• 1/2 teaspoon
