Guest guest Posted December 19, 2008 Report Share Posted December 19, 2008 Upside Down Apple Cake 3-4 apples (I used a mixture of granny and braeburn) 5 tablespoons of butter 1/4 teaspoon of cinammon 1/2 cup of honey plus 2 tablespoons 1/2 cup of plain yogurt (I used half & half yogurt 1 teaspoon of unsweetened vanilla from Lucy's 2 eggs pinch of salt (in the cake batter) 1 teaspoon of baking soda 2 cups of blanched almond flour Preheat oven to 310 degrees F. Peel and slice apples. Slice them at equal width, take the seeds out and the core pieces.Place the apples, cinamon, 2 tablespoons of butter and 2 tablespoons of honey in a large frying pan and cook apples 5 minutes, until just slightly tender.In a bowl, blend yogurt and honey and vanilla together. Next, add 3 tablespoons of melted butter and blend well. Add all the dry ingredients (flour, baking soda, and pinch of salt) to the wet mixture, and blend well. In a buttered baking pan (I also add a circle cut-out of parchment paper to the bottom of my pan) place the apples on the bottom. Next, pour the batter over the apples until covered.Bake for about 40 minutes, or until the center is not wiggly. The top will be starting to brown and a toothpick will come out clean. Cool completely and turn over on to a plate.I store the cake in the refrigerator while it disappears. a Kerwien ekerwien@... MUSHROOM CHICKEN AND SAUSAGE CASSEROLE 3-4 cups diced cooked chicken 1 pound pork sausage (I use the Italian Sausage recipe from Lucy's Cookbook) 1 stalk celery, chopped fine 1 tablespoon onion, chopped 1/2 pound mushrooms, sliced 8 ounces DCCC, softened 16 ounce bag frozen broccoli, cooked well and drained 8 ounces cheddar cheese, shredded Salt 1/2 teaspoon pepper Paprika, optional Brown the sausage with the celery, onion and mushrooms. Stir the softened DCCC into the sausage mixture until well blended. Coarsely chop the cooked broccoli. Mix all of the ingredients and spread in a greased 9x13" baking dish. If desired, dust the top with paprika. Bake, covered with foil, at 350º for about 30 minutes. Uncover and bake until hot and bubbly and the top is lightly browned, about 10-15 minutes. Tortilla Soup 2 whole chickens 1 large bunch of cilantro, washed well, chopped (leaves only)6 – 8 large garlic cloves, pressed1 large onion, chopped4 – 6 jalapenos, chopped1 46 oz. can tomato juice2 – 3 tomatoes, chopped (I peel them and take what seeds I can easily get, out) 2 – 3 tsp ground cumin1 – 2 tsp salt4 - 6 large carrots, peeled and choppedMonterey Jack cheese, gratedyogurt (optional, substitute for sour cream)Place all ingredients in a large pot. Cover chickens the rest of the way with water. Bring to a boil, reduce heat, cover and simmer slowly for 1 1/2 hours if chickens are thawed or 3 hours if chickens are frozen. Remove cooked chicken from the pot and cool enough to handle (I stick it in the fridge for a while). Remove meat from the bones and return the meat to the soup, cook for about 15 minutes longer to heat chicken back up.Check seasonings. So moist. I've just kept them in the fridge. Collin and I both love them and I feel good about giving him something that's a treat that will help with the constipation. BEET BROWNIESThinly slice the following in the food processor and then steam together for 30 minutes:4 medium peeled carrots1 very large peeled beet1 large peeled and cored appleAdd the following to the food processor:2 C.Nut butter other than peanut. The first time I made it, the cherries were juicier than I anticipated, and the only thing I had handy was some dried Granny apple slices, so I used those, and they worked well, and were less expensive than the all cherries. Smash the cooked berries and strain the mixture in a fine mesh strainer. Add honey to the strained liquid. I use about 1/2 a cup. Dr. Tichenor's, which is alcohol, peppermint oil, and arnica. It's a concentrate, which you dilute. For ordinary mouthwash, use one part Tichenor's and 6-8 parts water. For a raw throat, gargle well several times a day with 1 part Tichenor's and 4 parts water... it will burn, but I have had it knock down a raw throat before it can get out of control.
