Sardines

a piece of fruit probably 3 x a wk for lunch.

I get a full 1/3 of my calcium requirement from a measly 70 cent

can of sardines!!Tuna

I find the "in vegetable oil" variety to be the best-tasting

with chilies the most delicious. If I can't get "w/chilies. Add

cherry tomatoes adorned with salt and fresh ground organic

Fruit and Nut Bar (like Larabar)

Mejool Dates are really the 'glue' that holds all of them together.

2 cups pecans (ground to meal consistancy) or any legal/your stage nut2 cups raisins

3 cups Mejool Dates

Grind the pecans, add the raisins, grind togetherAdd the dates and grind together[We didn't use spices, but you could press the mixture

into a glass dish, cover with wrap and refrigerate]We cut into bar shapes and wrapped up and off it goes

*Cooked SCD mayonnaise1 pound boneless chicken breasts, boiledPreheat oven to 350 F.

Chop the chicken fine in a food processorCombine chicken, mayonaise, salt, and pepper to taste.Form spoonfuls of the chicken mixture into "nugget" shapes.Bake at 350 degrees for 35 minutes.

15 whole, unsalted nuts (almonds, walnuts, pecans,

macadamia, etc.)15 medium dates, pitted or medjool1/2 tbsp tahini1/2 tbsp honey1/2 tbsp water1/4 tsp cinnamon1/4-1/3 cup sesame seeds or any finely crushed nuts

[alternate: shredded coconut][Note: I soaked all the nuts and seeds, including those

used to make the tahini. We're not big fans of sesame

seed flavour, so we opted for shredded coconut on the

outsides rather than the final ingredient as listed.]Pit dates. [Cut around center, twist gently as you pull

apart. Remove pit.] Insert a nut into the center. Press date

together to close. In a small bowl, combine tahini, honey,

water, cinnamon. Mix well. Roll stuffed dates in the

mixture, coating lightly, then roll in sesame seed, finely

crushed nuts or shredded coconut. [Mixing and matching

centers and outmost layer is fun!] Place in fridge for about

Honey-Nut Caramels (with or without nuts)**You could use almonds in place of the pistachios or

simply omit the nuts all together if you prefer./1 1/2 cups honey1/4 cup water1 tbl lemon juice1/2 teaspoon salt1/2 cup tahini (sesame seed paste)1/2 cup chopped pistachiosequipment: candy thermometer, parchment paper, wax

paper.Line a square baking pan with parchment paper and

grease the paper with some oil.Place honey, water, lemon juice, and salt in a heavy

bottomed saucepan and bring to a boil. Let boil over

medium heat until it reaches hard ball stage, 260F on a

candy thermometer (about 15-20 minutes).Remove from the heat and quickly whip in the tahini. Pour

the mixture into the prepared pan. Sprinkle the pistachios

over the surface. Set aside in the refrigerator to cool and

harden. Use a greased knife to cut the caramels into

pieces. (if they start to get soft or sticky, quick-chill them in

the freezer before continuing). Wrap each piece in a

square of wax paper and twist the ends to secure. Store in

the refrigerator, as they tend to be a little melty at room

temp.
