Guest guest Posted March 13, 2009 Report Share Posted March 13, 2009 Corn Beef and Cabbage St. ’s Day 1Large, lean cut of brisket (about 2 ½ pounds) 1 Cabbage, cut into several pieces 5 or 6 large Carrots,washed well since you are not peeling 2 large White Onions, or several boiling onions 1 tsp. Homemade onion powder 1 tsp. Homemade garlic powder 1 Bay leaf, torn Salt and pepper to taste Cold water Put brisket in the bottom of the slow cooker or crock pot Place carrots and onions on top of brisket Season with onion, garlic powders homemade, bay leaf, salt and pepper Pour cold water to just below the top of vegetables, Cook on low for 8 hours. Place cabbage on the top of vegetables, Cook for another 2 hours . The vegetables came out tender and flavored by the meat. The meat was very tender and flavorful. I will say that the cabbage kind of stunk the house up. I roast backs, necks and feet with a little olive oil in another roasting pan. For dinner I de-bone the meat from both chickens and that is our dinner with well-steamed vegies. After dinner I take the chicken carcasses and the cooled off roasted bones and also beef marrow bones or knuckle bones together in a non-aluminum 16 quart stock pot, cover the bones with filtered water Add 2T. apple cider vinegar. Let it rest for one hour. Bring to a very gentle boil and skim off the top. Add sliced onions, celery and lots of carrots.Cover and simmer overnight. The next day let cool. Add a fresh bunch of parsley and/or fresh dill as it cools. Once semi-cooled remove all vegies and bones. Season with salt and/or pepper. Freeze extra soup for the days ahead. Tip: When my chicken has cooked I use two forks to seperate the meat from the bones. Gay B. Coconut Oil Bark 1 cup coconut oil 1/2 cup butter 2-3 T honey vanilla melt , then pour into 9x13 and freeze , when frozen break apart. Or pour into mini muffin paper liners and freeze and you have indiviual treat. I have used cashew butter with it too and it is wonderful. It is the only oil I use for cooking in a skillet.We have also used it on our skin too ctsigner@... Jerky Beef Slice the meat into thin strips (the thinner the better), lay it on a tray or hang it over a rack, in a low-heat oven or dehydrator. If the meat is lying on a tray you have to turn it over several times during the drying process. Generally takes about 12 hours to dry the meat in the low-heat oven or dehydrator. The jerky is "done" when it feels dry to the touch, and isn't oozing fat any longer. I just use salt on the meat before I put it in the oven to dry, but you can also marinade the meat for 6 hours or more before drying, or use spice rubs as you put it in the oven or dehydrator before drying.
