Moist Meatloaf:1 to 1.25 lbs of ground meat (I like veal, pork, chicken, lamb or any combo. )1/2 to 1 large portabello mushroom, chopped fine1/4 white onion and/or 4 scallions, chopped fineolive oil1-2 cloves garlic, pressed1 egg1 tablespoon almond flour1/2 teaspoon mustard powdersalt/pepper to tastePreheat oven to 350FSaute onions/scallions in a pan with olive oil until light brown. Press garlic into

the pan and before the garlic turns dark brown throw the contents into a large

bowl with the ground meat. Add the rest of the ingredients and mix it up. Throw

it into a 4x8 loaf pan and cook it for about 50 minutes. I like to use a meat

thermometer, just to be sure. Let it cool for at least five minutes before slicing

and serving. Change out any ingredient you like. The only unique aspect of my

recipe is the mushroom which, in my opinion, will guarantee an always moist

the eye ball.The mixture should be sticky, add the flour the the

dates and fruit. If the mixture starts the get too dry stop with the

flour. Make sure the mixture gets the pecan flour because of the

oils. The water will make it sticky again.*Be careful how you buy the dried fruit. Bulk dried fruits should

have any added sugar. Prepackaged dried fruits usually do.

Fruit and Nut Bar (just like Larabar)

Use food processor with mejool dates are really the 'glue' that holds all

of them together.

2 cups pecans (ground to flour consistancy)

2 cups homemade dried cherries or raisins (must be legal w/o sugar)3 cups mejool datesGrind the pecans, add the cherries or raisins, grind togetherAdd the dates and grind together.Press the mixture into a glass dish, cover with wrap and refrigerate

Cut into bar shapes and wrapped up.:-) Aimee
