Pancake variation of recipies in BTVC:1 banana1 egg

1 teaspoon baking soda1 teaspoon vanilla flavoring1/4 cup peanut butter.Beat all the ingredients together and pour in a well

buttered skillet and put in the oven to bake at 350 degress

for about 20 minutes. I usually melt the butter in the oven

and pour the batter in the hot butter. This eliminates the

need to stand at the stove and turn the pancakes. It just

makes one hearty pancake that I usually top with legal

applesauce or honey honey or more peanut butter.Of course this won't work if you are allergic to peanuts.

Farmhouse Butternut Squash Soup

4 bacon slices 4 large garlic cloves, chopped 1 teaspoon caraway seeds 2 pounds butternut squash, peeled, seeded, and chopped 1/2 pounds carrots, chopped 1 Granny apple, peeled, cored, and chopped 3 thyme sprigs 2 Turkish bay leaves or 1 California 3 1/2 cups reduced-sodium chicken broth (SCD legal of

course)2 cups water 1 to 1 1/2 teaspoons cider vinegar Cook bacon in a 4-to 6-quart heavy pot over medium

heat until crisp. Transfer bacon to paper towels to

drain. Add garlic and caraway seeds to fat in pot and

cook, stirring occasionally, until garlic is pale golden,

about 1 minute. Add squash, carrots, apple, thyme,

bay leaves, broth, water, 3/4 teaspoon salt, and 1/2

teaspoon pepper and boil, uncovered, until

vegetables are tender, 15 to 20 minutes. Discard

thyme and bay leaves. Purée about 4 cups soup in a

blender, in batches if necessary, until smooth (use

caution when blending hot liquids). (I'll be using my handy dandy immersion blender!!) Return to pot and

season with salt, pepper, and vinegar. Serve topped

with crumbled bacon.

Carmel Sauce

I made an amazing caramel sauce last night from the

SCD recipes site that maybe you’d want to try.

Maybe even mix the caramel sauce into his yogurt.

Adding some nuts to the caramel sauce and letting it sit will

allow it to become like a nut brittle?

Yohana muffins

( from the SCD recipe website eatingscd.wordpress.com )

and used applesauce instead of banana--came

out fabulous!! I put some thick yogurt on top with some honey

drizzle and it was a great treat!!.

This recipe is modified from the recipe found in the BTVC

book. Dry ingredients:

3 cups almond flour

1/2 tsp. baking soda

1/8 tsp. salt

Wet ingredients:

3 large eggs

1 very ripe banana, mashed well

1/2 cup rich yoghurt (made from half and half)

1/2 cup honey

optional: 1/2 tsp. vanilla extract.

Preheat oven to 350 degrees.

Combine dry ingredients in one bowl. In another bowl, combine wet ingredients. Combine wet and dry mixes. Fill paper muffin cups 2/3 full of batter. Bake on center rack of oven for 25-30 minutes or until

lightly golden brown. Remove muffins from pan quickly or

they will burn on the outside from the residual heat of the

muffin pan.Cool and store in refrigerator. Yield: One dozen muffins. Carol ctkellum@...

Chicken Bake

Oven at 180*, Cooked for about 20 mins.

Before adding the cheese then cooking for another 10

mins, approx. It depends on the thickness of the chicken

breasts, just cook until they are cooked right through.

In a pan, melt some butter and sauté some leeks and carrots

(you could use any veggies you like)

Add salt to taste, and some fresh tarragon.

Sauté until the veggies are beginning to soften.

Add some frozen peas. Remove from the heat.

Stir in some SCD yoghurt

Add a handful of cheese, according to taste to make a cheese

sauce. Warm this through gently.

Place chicken breasts in the bottom of an oven proof dish

and spoon the cheese and veg sauce on top of the chicken.

Cover with foil and bake in the oven until the chicken is

cooked. I added a sprinkle of cheese on top about 10 mins

before the chicken was cooked. ksmithnvq@... -
