In a pan, melt some butter and sauté some leeks and carrots (you could use any veggies you like), add salt to taste, and some fresh tarragon. Sauté until the veggies are beginning to soften. Add some frozen peas. Then remove from the heat and stir in some SCD yoghurt, add a handful of cheese, according to taste to make a cheese sauce. Warm this through gently. Then place chicken breasts in the bottom of an oven proof dish and spoon the cheese and veg sauce on top of the chicken. Cover with foil and bake in the oven until the chicken is cooked. I added a sprinkle of cheese ontop about 10 mins before the chicken was cooked.
