Dill Dip/Dressing

1/2 c. Homemade Mayo1/4-1/3 c. DCCC (depends on how thick you want)1-2 tsp lemon juice (I add until I get a nice consistency)1 tsp Dill Weed (I use more I like lots of dill)salt to tastepepper to tasteIt's great for fish and I use it as a salad dresssing :-) or dip

SCD-Legal Cinnamon Cookies

Preheat oven to 350Fmelt 4 Tbs buttergrease enough cookie sheets for 35 cookiesIn a bowl, mix:2 1/2 cups almond flour1 cup SCD yogurt3 Tbs ground cinnamon1 Tsp vanilla1/8 Tsp baking soda1/3 - 1/2 cup honey (adjust to taste, i like `em sweet)4 Tbs melted butterBake at 350F for 15-20 minutes, will still be soft in center.

Cool for 10 minutes.

Somethin Tasty

1) Few pieces of egg plant, battered and fried them. Set aside

on paper towel to cool. (Eggs whipped, separate dish nut flour

little bit o baking soda. Dip in the egg then nut flour and fry)2) Sate' what ever veggies you like. I had broccoli, chunked

carrot, red bell pepper, mushrooms, red onion (think yellow

onion might add better flavor, not so sweet) But don't cook to

death, the crunch gives it good texture.3) Cook some chicken strips. Using a fork or 2 shred the

chicken. Or use chunks its all up to you and how much work

you want to put into it.4)Grate some cheese, I like swiss.

5) In which ever dish you'd like (depending on how much

you want to make) layer fried eggplant, then sated veggies,

maranara sauce (found at www.digestivewellness.com),

cheese, then repeat with as many layers as you want. 6) When layered I nuke it for about 45 seconds to 1min.

You could probably put it in the oven to melt and make the

Guacamole

Guacamole

Blend 4-6 ripe Haas avocados

Juice of two lemons Add 1 teaspoon salt

And 1/2 teaspoon white pepper.We use this instead of mayonnaise many times.

We also use it as a mild guacamole.

Pork Rinds

Cook ground meat

with onion,

garlic,

cumin,

chili powder,

paprika, salt,

pepper and

jalepenos (or whatever spices you like. just

S & P is good too) until ground meat is done.Meanwhile, shred about

1.5 - 2 cups of colby jack cheese

dice an onion and some more jalepenos Arrange a healthy portion of pork rinds in a round cake

pan and crush up the big pieces a little.Add diced onion

*Chicken Muffins*

- Preheat oven to 350* degrees

- 2 cups finely ground cooked chicken (I used a mix of white

and dark) - infuse chicken with onion and garlic flavors

while cooking by sautéing in garlic and onions in olive oil

before adding chicken

- 2 eggs

- 2 pureed ripe bananas (optional - my 3 y o likes things on

the sweet side)

- 1/2 cup of cooked spinach or pureed cooked carrots

- 1/2 tsp salt

Mix the above well & pour into muffin pan with liners ( I

prefer liners over Teflon ). Bake @ 350 for about 30 - 40

minutes. Try making these more than once. It is more of an

art than science. You will begin to come up with your own

creations.

*Meatloaf Pies*

- Preheat oven to 350 degrees

-1/2 lb cooked ground beef

-1/2 cup of cooked spinach

-1/2 cup of pureed cooked carrots or squash

-2 eggs

-1/2 tsp of salt

- any other spices to taste

Mix the above in food processor & pour into muffin pan.

Bake at 350 for about 35-45 minutes.

*Carrot Muffins*

- Preheat oven to 325 degrees

- 1.5 cups of pureed cooked carrots or squash

- 2 eggs

- 2 ripe mashed bananas

- 1 tsp of cinnamon

Mix all ingredients in above in a food processor and spoon

into muffin pan. Bake at 325* for 45 min to one hour.

Try this recipe: Muffins2 cups pecan flour3 medium bananas2 eggs1 tbsp. vanilla1 tsp baking soda1 tsp. apple cider vinegarpinch saltBake 350* for 20-23 minutes.

Cool in pan for 5 minutes, then remove.

Makes 18 muffins.
