Stuff the meat if it is thick enough like a roast. Do this by cutting deep slits in the meat. Filling it with a mixture of chopped onion, minced garlic and salt and pepper. Put it in a cast iron Dutch oven on a med. to low heat and brown the meat on all sides. Brown it till you get a good bit of drippings stuck to the pan. Add water about a 1/4 cup. To cover the bottom of the pot. Do this a few times as you let the water simmer out. The last time you let the water simmer out add some chopped onions and caramelize them in the drippings, add water to cover half of the roast and then cover and put in the oven on 350 till tender. About 2 hours. Chicken use the same seasonings and brown it slow and stay with it.
