Broiled Fish Romano This fish is broiled with a creamy cheese coating for an

impressive flavor and texture.

Prep time: 5 min. Makes 6 servings.

½ cup Romano Cheese ¼ cup butter, softened 3 tablespoons SCD mayonnaise 1 lemon ¼ teaspoon dried basil or 4 large leaves fresh basil chopped ¼ teaspoon ground black pepper ¼ teaspoon homemade garlic powder or 1 large clove

crushed through a press 6 fish fillets (I used Mahi Mahi but any works) Preheat oven broiler on hi temp. If the fillets are fat

then set to 350 degrees to bake them first. Grease with

oil a Pyrex pan or broiler pan. In a small bowl mix together

the Romano cheese, butter, mayonnaise and ½ of the juice

of the lemon. Season with basil, pepper and garlic. Mix

well and set aside.Arrange fillets in a single layer on the

prepared pan. Lightly sprinkle some pepper on them and

then squirt the other ½ of the lemon juice on top and

bottom of the fillets. Do not salt the fillets because the

cheese mixture is very salty and it will be to salty if you

salt the fillets. Broil thin fillets 3-5 minutes on each side.

If thicker fillets bake them for 3-5 minutes on each side

and them broil them for 3-5 minutes on each side. Remove

pan from oven and cover the fillets with the Romano

cheese mixture on the top side. Broil for another 2 minutes

or until the topping is lightly browned and fish flakes

This recipe is modified from the recipe found in the BTVC

book. It’s been my replacement for bread and my breakfast

every day. I figure I’ve eaten over 2700 muffins in three

years. I love them.

Dry ingredients:

3 cups almond flour 1/2 tsp. baking soda 1/8 tsp. salt

Wet ingredients:

3 large eggs 1 very ripe banana, mashed well 1/2 cup rich yoghurt (made from half and half) 1/2 cup honey optional: 1/2 tsp. vanilla extract.

Preheat oven to 350 degrees.

Combine dry ingredients in one bowl.

In another bowl, combine wet ingredients.

Combine wet and dry mixes.

Fill paper muffin cups 2/3 full of batter.

Bake on center rack of oven for 25-30 minutes or

until lightly golden brown.

7. Remove muffins from pan quickly or they will burn

on the outside from the residual heat of the muffin pan.

Cool and store in refrigerator.

Yield: One dozen muffins.

This salad has become a staple at our family gatherings.

Not only is it beautiful, but the asiago plays nicely against

the strawberry. It is one of my most requested recipes.mixed baby greensasiago cheese, large shavingsstrawberries, sliced

Family Favorite Dressing:2/3 cup extra virgin olive oil1/4 cup red wine vinegar1 T water1/4 cup honey1/2 tsp black pepper, fresh ground1 clove garlic, smashed1/2 tsp ginger powder1/2 tsp mustard powder1. Combine all dressing ingredients in a shakable container.2. Shake well, dress greens and toss to coat.3. Top salad with strawberries and cheese.4. Sit back and rake in the compliments.

This dressing naturally separates and will need shaking

right before using.

Note that the large shred of asiago cheese is preferable to

the small. The large pieces assert their character in a way

that a small simply cannot and are vital to the experience.

If possible make this dressing a day ahead to give the garlic

time to suffuse as the flavor will improve with time.

No need to refrigerate dressing. It will keep a week or more

at room temperature.

Notes:Smashing the garlic is important. Mincing the garlic will not

give the same effect. Smashing will allow more of the

essence of the garlic to infuse the dressing.

Shrimp Stir Fry3 Tbsp oil1 lb. large shrimp1 Tbsp minced fresh ginger root2 whole scallions2 cloves garlic, minced1 bag frozen broccoli florets1 bag frozen green beans3-4 Tbsp homemade chicken broth/stock1-2 Tbsp dry red wine (optional)1 Tbsp sesame oilIn a wok or large skillet, heat 1 Tbsp of the oil until hot.

Add shrimp and salt and pepper to taste and stir fry over

moderately high heat for 2 minutes or until shrimp turn pink.

Transfer shrimp to a plate. Add remaining oil to wok. When

hot add ginger root, scallions and garlic and stir fry for 30

seconds. Add broccoli and green beans and stir fry for 1

minute. Add broth, wine and salt to taste, cover and steam

until veggies are as soft as you want them. Return shrimp

to wok and stir fry for 1 minute or until shrimp are heated

through. Swirl with sesame oil and serve.

Lemon Egg - Calcium supplementation

Place whole, washed, un-cooked, uncracked, organic

eggs in a clean glass or ceramic bowl. Cover the eggs

with freshly squeezed organic lemon juice (lemon juice is

pasteurized and should never be used as a substitute).

Cover loosely and place it in the refrigerator. A few times

during the day, gently - very gently - agitate the liquid in

the bowl. As the Calcium from the shells is leached by the

lemon juice, bubbles will appear around the eggs.

Approximately 48 hours later, when the bubbling has

stopped, carefully remove the eggs and try not to break

the egg membranes. Put the liquid in a glass jar with a lid

tightly and shake the mixture. You now have “Lemon Eggâ€.

I love to drink it straight or mix 1 to 2 oz in my Total Nutrition.

It is the best source of Organic Calcium I know of. The eggs

are still good. Use them. Make Lemon Egg in small batches

so you use it up in 7-14 days. You can freeze it in ice cubes

if you wish. If it smells bad, toss it out.
